Need a recipe that has apricot preserves.............?
Here's a delicious way to use your apricot preserves (also works well with pork chops) Oh, and only 4 ingredients!!!



Apricot Chicken



4 large boneless skinless chicken breasts, salt and peppered

1/3 cup Apricot Preserves

1/3 cup coarse grind Dijon mustard

1/3 cup cider (or white, red, etc) vinegar



Heat oven to 300F

Brown chicken breasts in a non stick skillet, meanwhile, mix together the preserves and mustard, set aside; when the breasts have browned on the first side, flip them and add the preserve mixture to the top of them and reduce the heat to low, and cover for 10 minutes......Remove chicken to a plate and loosely cover with foil and place in the oven to keep warm........meanwhile, turn the heat to high in the skillet and when the mixture begins to bubble, stir constantly with a wooden spoon, when it's reduced a bit, add the vinegar and stir constantly over high heat until the mixture has reduced by half and is thick.....remove chicken from oven and plate, pour any juices back into the boiling mixture and continue to reduce till thick and glossy......Serve over rice.......Hope you enjoy this!!!

Apricot Pork Loin



Ingredients:





1 can (10 1/2 oz.) Campbell's? Condensed Chicken Broth

1 jar (18 oz.) apricot preserves

1 large onion, chopped

2 tbsp. Dijon-style mustard

4 lb. boneless pork loin roast







Directions:







MIX broth, preserves, onion and mustard in 3 1/2-qt. slow cooker. Cut pork to fit. Add to cooker.



COVER and cook on LOW 8 to 9 hr.* or until done.



TIP: *Or on HIGH 4 to 5 hr.



For thicker sauce: Mix 2 tbsp. cornstarch and 2 tbsp. water until smooth. Remove pork from cooker. Stir cornstarch mixture into cooker. Cover and cook on HIGH 10 min. or until mixture boils and thickens.

INGREDIENTS



* 1/2 teaspoon salt

* 1/4 teaspoon cayenne pepper

* 2 Cornish game hens

* 2 tablespoons butter, melted, divided

* 1/4 cup apricot preserves

* 1 tablespoon honey

* 1 tablespoon grated onion

* 1/8 teaspoon ground nutmeg



DIRECTIONS



1. Combine the salt and cayenne. Rub a third of the mixture inside hens. Brush 1 tablespoon butter over hens; sprinkle with remaining seasoning mixture. Place on a rack in a shallow baking pan. Bake, uncovered, at 350 degrees F for 30 minutes.

2. Meanwhile, in a saucepan, combine the preserves, honey, onion, nutmeg and remaining butter. Cook and stir until preserves are melted. Brush over hens. Bake 35-40 minutes longer or until golden brown and a meat thermometer reads 180 degrees F. Cover and let stand for 5-10 minutes before serving.
Reply:Make on of your favorite cookie recipes such as sugar cookies but instead of rolling them out and cutting them, shape the dough into balls of about a tablespoon then with your thumb or a teaspoon make an imprint while pushing them down. Fill the imprint with some apricot preserves.



You could make a layer cake and put the apricot preserves inbetween the layers. If you make the frosting from scratch, vanilla, add a spoonful or two of the preserves to the frosting.



Make vanilla pudding and before it sets in individual cups, add a spoonful of the apricot preserves to each one. Drizzle with melted chocolate if you like and chill.



Heat some preserves in a double boiler or over a gentle heat and serve hot over vanilla ice cream.
Reply:You can put some on top of grilled salmon , just before they are done.The same with grilled chicken.

1 acorn squash, halved and seeded

salt to taste

2 teaspoons butter

3 tablespoons apricot preserves



Preheat oven to 400 degrees F (200 degrees C).

Place squash halves cut side down in a baking dish. Fill the dish with water to the depth of 1/4 inch. Bake 40 minutes in the preheated oven.

Remove squash from oven, and set the oven to broil. Turn squash cut side up in the dish, and season lightly with salt. Place 1 teaspoon butter and 1 1/2 tablespoons apricot preserves in each squash half. Return to oven, and broil 5 minutes, or until butter is melted and squash is lightly browned.



Also, if you eat fried fish, this is a good dipping sauce for that...



1/2 cup apricot jpreserves

2 teaspoons brown mustard

1 teaspoon prepared horseradish

Pinch of sugar



Just mix ingredients together and serve.
Reply:apricot preserves tastes wonderful on salmon...later or in the future you can even put peaches or pineapple on the salmon!

Reply:It would work well to mix with bar-b-que sauce and then brush on some grilled chicken. Brings a nice sweetness. You could even go so far as to marinate the chicken with the preserve.
Reply:Chicken breast cut into pieces, French dressing, package of onion soup mix, small jar of apricots, mix together cook in oven until done.............great over rice

8 oz. butter, softened

2 c. flour

2 egg yolks

1/2 c. brown sugar

apricot preserves

Ground walnuts

Egg whites



Combine butter, flour, egg yolks and brown sugar to make dough. Refrigerate. Roll dough into small balls (approximately 50). Dip in egg whites and then roll in walnuts. Place on ungreased cookie sheets. Put a thumbprint in each cookie and bake for 10 minutes in a 350 degree oven. Thumbprint again and fill thumbprint with preserves and bake for additional 8 minutes.
