Does anybody know a recipe that has apricots in it?

My Grandmother used to make this awesome bundt cake that when it was done had an orange color and the icing was clear/white. It was so good. The only ingredient I know she put in it was apricots.

APRICOT BRANDY BUNDT CAKE



1 c. softened butter

2 1/2 c. sugar

1 1/2 tsp. vanilla

3 c. sifted cake flour

1/2 tsp. baking soda

1 c. sour cream

1/2 c. apricot brandy

6 eggs

1 1/2 tsp. orange extract

1/2 tsp. salt



Cream butter and sugar until light and fluffy. Add all 6 eggs, one at a time, beating well after each one. Add vanilla and orange extract. Sift together flour, soda and salt. Add alternately to cream mixture with sour cream and brandy.

Mix well. Pour batter into greased and floured 3 quart Bundt pan. Bake at 350 degrees for 1 1/2 hours, or until edges pull away from sides. Cool in pan. Dust with confectioners' sugar.

3 c. flour

2 c. sugar

1 1/2 c. oil

4 eggs

1 tsp. vanilla

1/2 tsp. salt

1 1/2 tsp. baking soda

1 (14 oz.) can evaporated milk

1 jar Baker's apricot filling

1 c. chopped nuts



Mix all ingredients together for two minutes. Pour in greased and floured bundt pan. Bake 1 hour and 10 minutes in preheated 350 degree oven. Check with clean toothpick. Wait five minutes and turn over on flat dish. After cool, string with thin icing if desired.

Thin Icing: Mix powdered sugar and water and any flavoring (very thin).



This is my deceased Mother in law recipe. I really enjoyed it when she made it. Hope it helps you out.

INGREDIENTS:

3 cups all-purpose flour

3 cups sugar

1 cup butter or margarine -- softened

1 cup sour cream

1/2 cup apricot nectar

1 teaspoon lemon extract

1 teaspoon almond extract

1/2 teaspoon salt

1/4 teaspoon baking soda

6 eggs

1 jar apricot preserves -- (12 ounces)

3 tablespoons lemon juice

PREPARATION:

Grease and flour a 12-cup Bundt cake pan. Preheat oven to 325 degrees.

In a large bowl with a hand mixer at low, beat all ingredients except preserves and lemon juice for about 30 seconds. Scrape bowl frequently.

Turn mixer to high and beat for about 2 minutes. Pour into pan.

Bake at 325 degrees for about 1 hour and 20 minutes, or until a wooden toothpick comes out clean when inserted in the center. Cool on a rack for 20 minutes, then remove from pan. Cool thoroughly.



In a saucepan over medium heat, combine preserves and lemon juice. Cook, stirring occasionally, until preserves have melted. Cool to lukewarm. Spoon half of the preserves mixture over the cake. Serve with remaining preserves and top with whipped cream, if desired.

Ingredients

1 package (18.25-oz.) spice cake mix

1 cup water

1/3 cup almond flavored liqueur *

1/3 cup vegetable oil

3 large eggs

1 package (6-7-oz.) finely diced Sun-Maid apricots



Glaze:

1 1/2 cups powdered sugar

1 tablespoon milk

1-2 tablespoons almond flavored liqueur *

3 tablespoons sliced, toasted almonds



HEAT oven to 350F. Grease and flour a 12-cup (10-inch) bundt pan.

COMBINE cake mix, water, 1/3 cup almond flavored liqueur, oil and eggs.

BEAT at low speed 1 minute. Scrape down sides of bowl. Increase speed to medium and beat 2 minutes longer.

STIR in apricots; pour batter into prepared pan.

BAKE about 45 minutes or until cake is golden brown and springs back when lightly touched. COOL in pan on wire rack 20 minutes.

INVERT cake onto serving platter.

COMBINE powdered sugar and milk.

STIR in enough almond flavored liqueur to make a medium-thick glaze. Spoon over top of warm cake, letting excess drip down sides.

TOP with almonds and cool completely before serving.



*NOTE: 1/3 cup water plus 1-1/2 teaspoons almond extract may be substituted for almond flavored liqueur. For glaze, replace almond flavored liqueur with 1/4 teaspoon almond extract and increase milk to 2 tablespoons.
