My mom and I bought Apricot Filling last Christmas, and didnt get to make the cookies. This year we still have it and since the apricot is sold out everywhere and there is no expiration. Does anyone know about how long you can keep Baker Brand Apricot Desert Filling if its never opened?

Usually if you don't open it and it still has its original vaccuum seal, it will last for years and years. That's the whole point of "canning" fruits and vegetables, to make it last for several years later.
So it should be just fine if it's only a year old.
