Apricot Sauce for Steak?

Im gonna be cooking steak in an apricot reduction tonight. Anyone have any good recipes for an apricot sauce.

Skinless apricot

Cayan pepper

Butter

Lemon Juice



Reduce and serve...

Apricot Sauce for Steak?
sounds pretty good. i was thinking of maybe an indian twist by adding a little curry powder and coconut milk but yours sounds good.
Reply:you should add dried apricots, diced and soaked in brandy (maybe calvados) , no lemon, and sauteed shallots. this will give it a "bigger, broader" flavor profile. make sure you rub the steak with coarse sea salt, freshly ground black pepper, and a pinch of brown sugar. grill on a ferociously hot grill, and finish in the oven, covering with the reduced sauce at the last minute
Reply:1 cup beef broth

1 cup orange juice

1/2 cup chopped dried apricots

3 tablespoons apricot preserves

1/4 tsp. salt

4 New York strip steaks or ribeye steaks

2 tsp. cracked black pepper

1 Tbsp. vegetable oil

PREPARATION:

In small saucepan, combine broth, juice and apricots. Cook until mixture is reduced and thickened, about 7-10 minutes. Add apricot preserves and salt and continue cooking over very low heat, stirring frequently.



When you start grilling steaks, remove sauce from heat.

Prepare and preheat grill. Press the pepper firmly into each side of the steaks (1/4 teaspoon for each side). Brush grill rack with oil so steaks don't stick. Grill steaks 6" from medium coals for 8-10 minutes, turning once, until medium doneness. Place on serving platter and pour warm apricot mixture over. Serves 4

2 tablespoons unsalted butter

1 1/2 tablespoons white sugar

4 fresh apricots, peeled, pitted, and pureed

1/4 teaspoon vanilla extract

1 tablespoon orange blossom honey





DIRECTIONS

Melt the butter in a saucepan over medium-low heat, and stir in the sugar. Cook and stir just until the sugar has melted and is lightly browned. Remove from heat, and continue stirring until caramelized. Mix in the pureed apricots and vanilla. Over low heat, mix in the honey. Continue to cook and stir 5 minutes, until thickened.
