Mother used to make this at the holidays. I sounds gross but it's delicious. It was my favorite thing she made at Christmas. Sister-in-law stole all her handwritten recipes and I've been unable to find it in any of my old cookbooks - even the ones going back to the '30s. Thanx!
Apricot and Prune Bread?
I'd change this recipe to maybe 1/2 cup dried prunes and 1/2 cup apricots.
Apricot Bread Recipe
Makes 1 loaf
Ingredients:
2 cup All-purpose flour
1 cup sugar
1 cup chopped dried apricots
1/2 cup chopped walnuts
1 tbsp baking powder 1 tsp salt
2 eggs (beaten)
1 cup milk
1/4 cup vegetable oil
Using a bowl combine flour, sugar, apricots, nuts, baking powder and salt. Set aside. In another bowl combine eggs, milk and oil. Add liquid to the dry ingredients. Just till blended. Pour mixture into a greased baking pan. Place in a 350 F oven for 50-60 minute. Remove let cool for 10 min. Remove from pan. Continue to cool on wire rack.
